Fall is a great time to pack up your RV and head out on a camping adventure. The air is crisp, the hustle and bustle of summer slows down, and the time to gather close with loved ones around the campfire arrives. Fall RV trips are the perfect time to take advantage of cooler, slower moments and enjoy the great outdoors and the company of friends and family. What better way to facilitate that than with warm comfort foods that are simple and quick to make. 

Here are a few easy meals you can try out this fall on your camping trips:

Walking Nachos

A classic favorite at high school football games, walking nachos (also known as walking tacos) are an incredibly easy meal that’s also fun to eat. All you need are some snack-sized bags of Fritos-brand corn chips or Doritos, ground beef cooked with taco seasonings, and toppings, such as shredded lettuce, diced tomatoes, diced onions, sour cream, salsa, and shredded cheese. Simply open the bags of chips, scoop in the beef and toppings, add a fork, and enjoy! Not only is this a quick and easy meal, it’s portable, too. And you can easily sub ground turkey or chicken instead of beef. 

Pumpkin Pasta

For many people, fall signals the return of everything pumpkin flavored, from coffees to savory meals. Luckily, a pumpkin pasta meal that you can make in one pot isn’t loaded with the sugar a pumpkin spice latte holds, but is instead packed with vitamin A and antioxidants. Boil your favorite pasta following the directions on the package, then after draining the pasta, add a can of pumpkin puree, some heavy cream, and freshly shaved parmesan cheese. Gently stir the ingredients together until the pasta is coated in the creamy pumpkin sauce. Add salt and pepper to taste and serve with a few leaves of sage and more parmesan cheese. This is a hearty, vegetarian-friendly meal that will keep you warm on the chilliest of nights. 

Crock Pot Beef Stew

One of the greatest kitchen inventions, the crock pot is a trusty workhorse that will never let you down when you need a stress-free one-pot meal. All you need is to brown about 1 pound of stew meat in a cast iron pan until a light crust forms on the cubes of beef. Transfer the beef into your crock pot and add roughly chopped onions, potatoes, and carrots. Toss in a bay leaf, some tomato paste, a can of stewed tomatoes, beef broth, salt, and pepper, then set the crock pot on low for six to eight hours. You can go for a hike, read, or spend your day however you’d like knowing you’ll come back to your rig ready to enjoy a piping-hot bowl of beef stew.
