Cinco de Mayo is one of those holidays that, while seemingly everyone in America celebrates it, many don’t know what or why they’re celebrating. The holiday does not commemorate Mexican Independence Day (as many incorrectly believe), but instead celebrates the Mexican army’s victory over France in the Battle of Puebla, which occurred on May 5, 1862. According to History.com, the day is considered a secondary holiday in Mexico and no one makes a big deal out of it. In the United States, however, Cinco de Mayo has become a day to celebrate Mexican culture and heritage, especially when it comes to Mexican food and drink.
For RVers, Mexican food is an excellent, quick option for meals because most dishes can be made quickly with just a few, fresh ingredients. If you’re celebrating Cinco de Mayo this year, try out versions of these dishes!
Tacos
Everyone loves tacos and they can suit a variety of dietary needs and tastes. The tortilla itself can make or break the meal, so be sure to choose quality corn tortillas as your base. You can purchase them or better yet, make them yourself!
Then fill the tacos with whatever your heart desires: Sauteed ground beef, lettuce, tomatoes, onions, and salsa is a classic combination, but you could also opt for spicy grilled shrimp with lettuce and creamy avocado sauce! Tacos can very easily be vegan and gluten free, too.
Enchiladas
Enchiladas are one of the easiest and fastest meals you can make for a crowd, which is great if you’re RVing with kids. Simply saute some ground beef or chicken in a pan and add enchilada sauce and green chiles. In a 9×13 dish, place some of the meat and sauce mixture on the bottom, then fill tortillas with a scoop of mixture. Roll the tortillas and place them seam side down in the dish, then top with your choice of shredded cheeses. Cheddar and Mexican blended cheeses work great! Then bake or cook over a grill for 20-25 minutes until everything is bubbling!
Margaritas
Tequila usually makes an appearance each Cinco de Mayo. This spirit, made from the agave plant, is the star in margaritas. Whether you prefer margaritas over ice or frozen, with a salted rim or without, you can’t deny that this drink makes an excellent, refreshing way to cool down and unwind around the campfire.
All you need is tequila, lime juice, and Cointreau (any orange liqueur or even orange juice can be used as a substitute for Cointreau). Shake the ingredients together and pour over ice, or use a margarita machine to make a frozen version. Add salt to the rim in advance, if you desire.
