Make 3 Easy Camping Meals in Just One Pot
Cooking can sometimes require multiple pots and pans, but when you’re camping in your RV, you want to keep things as simple as possible. That’s why it’s best to choose meal recipes that only require one pot or pan. This will not only reduce your cooking time but will also cut down on your clean up time. Who wants to be washing dishes when you can be outside doing an activity or sitting by the campfire?
If you’re looking for ways to make RV cooking easier, check out these 3 easy meals you can make in just one pot.
Frittatas
Great for breakfast, lunch, or dinner, a frittata is essentially eggs and your choice of vegetables, meats, and/or cheeses. Simply heat oil in a cast iron skillet and sauté your choice of fillings. Then add a few whisked eggs into the pan and season. Let cook until the egg has set.
Chili
You can’t go wrong with chili, whether you like it with meat or vegetarian style. In a large pot, add oil and chopped onions. Then brown your choice of meat (if using) and add seasonings.
Next, add a large can of diced tomatoes and kidney beans and/or black beans—dried beans that have been soaked overnight work great, but you can also use canned beans to make this dish even easier and faster to make!
Let the chili simmer for several hours if using dried beans (less if using canned beans), until the beans are tender. Serve topped with cheese.
Pizza
Believe it or not, you can make a pizza in a covered Dutch oven over a campfire. Simply line a cast iron Dutch oven with parchment paper and sprinkle it with some cornmeal or flour. Then add pizza dough and spread out. Top the dough with your choice of sauce and toppings, and place the Dutch oven on some coals in the fire. You can pile some coals on the cover, too! In about half an hour, you’ll be enjoying campfire pizza.
Of course, any of these meals can be made on an RV stove, but don’t be afraid to experiment with cooking over a campfire. The pizza recipe is a great starting point. Be sure to use cookware suitable for high heat, such as cast iron pots and pans. Cooking outside will allow you to enjoy the great outdoors and help keep excess heat and moisture out of your rig.
